Black Sesame, white chocolate. We call this our love letter to Japan. If you have been following our posts recently you know how much eating we have done in Japan and how much we learned as a result. This chocolate is crafted with an heirloom cacao butter pressed onsite from organic cacao beans. We add a generous serving of black sesame seeds grown and roasted by 4 generations of Japanese sesame farmers. The sugar content is low, just like it is in traditional Japanese sweets.
Milk chocolate. Using the very best raw ingredients we craft a milk chocolate bar that you will remember. Most milk chocolate on the market uses a skim milk powder, we tried out using a whole milk instead and never looked back. Besides these are northern Californian cows so you know their milk is the highest grade. In addition to top shelf milk, we have amped up the cacao percentage and so you could call it a dark milk, as in dark chocolate, in fact the sugar percentage is the same as our 75% dark.
Imagine walking along a gravel path through a vibrant herb garden, the beautiful blue Colorado sky above you and a picnic basket in your hand. This garden exists, at the Denver Botanic Gardens. For the past several years we have been making chocolate with herbs grown in their herb garden and this has been one of the best. Fresh mint leaves are dried and added directly into our stone grinder as we prepare a batch of extra creamy dark chocolate. By boosting the cacao butter content this dark chocolate could remind you of a creamy milk chocolate - without the dairy.
Dark chocolate is the soul of Fortuna. Two ingredients; carefully sourced cacao seasoned with a small amount of organic sugar cane. This chocolate is vegan, gluten free and is delicious eaten straight up or melted into a mug for an invigorating drink. At 75% this is a classic for the industry elevated by an heirloom cacao grown organically in community as it has been for thousands of years in the motherland, what we now call Mexico.
Quinoa is a resistance crop, according to some accounts if it were not for the indigenous growers in what is now known as South America cultivating it in secret, quinoa would have been wiped out completely by the Spanish colonists. Heating it so that it puffs up results in the most delicious flavor and an incredible texture. We mix it into our low sugar, dark milk chocolate for a crunchy bar that is full of nutrition.
Turmeric is so beautiful and things like beauty count for wellness in our book. Working with single origin Indian turmeric as a base flavor we have added a sprinkling of organic lime zest, and turbo charged the body with organic coconut. The result is a bar filled with sunshine, super light and refreshing filled with the nutrient dense cacao butter we always use, heirloom & organic cultivated in community.
